Delicious Vegan Recipes

Here are some of the vegan recipes Dr. Michael Klaper has shared in his popular Medicine Capsule newsletter. Vegan food is so incredibly tasty; try these recipes and you will be hooked!

 

Dressings

Dressings make a HUGE difference in taste and add variety and depth to any salad, vegetable or green! Here are two quick and healthy dressings to make in a blender or bowl – fast and easy!

Basic Delicious Healthy Dressing

Ingredients

¼ cup cashew pieces
2 tablespoons chopped shallots
½ cup water
¼ cup vinegar
2 teaspoons Dijon mustard
1 teaspoon maple syrup
¾ teaspoon salt
A few pinches of pepper

Instructions

Blend 5 minutes in a blender or until very smooth.
 

 

Very Vegan Ceasar Salad Dressing

Ingredients

2 Tbsp. almond meal (or wheat germ)
3 cloves crushed garlic (through a press)
3 Tbsp. Dijon mustard
3 Tbsp. nutritional yeast flakes
2 Tbsp. soy sauce
3 Tbsp. lemon juice
¼ cup water

Instructions

Combine almond meal, garlic, mustard and nutritional yeast in a bowl to make a paste, and then whisk in the remaining ingredients.
 

 

Low-Fat Strawberry-Mint Dressing

For health reasons, I always recommend making your own oil-free salad dressings.

Health Tip: If you’re eating out, stash a 2-4 ounce container of the dressing in your purse or briefcase. Take control of your health, don’t let the restaurants decide what you put in your body!

Buttery Lettuce Soup

Vegan Buttery Lettuce Soup

Note: In Medicine Capsule #14, a Fruits and Veggies Quiz claimed lettuce is the only vegetable that’s “never sold dried, frozen, canned, processed, cooked, or in any other form except fresh.” In response, Ms. Gale shared her memory of a “delicious,” and, in her words, “cooked, heart-unfriendly” Cream of Lettuce Soup that used “butter lettuce AND lots of butter.” Indeed, images of “cream of lettuce soup” abound in internet search results.

This recipe is a great way to use up extra lettuce, spinach, or other salad greens. The Garbanzo beans give it the buttery flavor. Cauliflower or potatoes could be added for a heartier or creamier texture/color. It is also gluten free!
